
Swiss Cheese Fondue for One
A single portion of Swiss cooking, ready in 23 minutes with 8 minutes of prep. Vegetarian, and written for one, so there is nothing to halve.
Method

Boil the potato in salted water for 12–15 minutes until tender, then drain and cut into chunks. Meanwhile, rub the inside of a small pan with the cut garlic clove.

Warm the wine or apple juice gently over low heat.

Toss the grated cheeses with the cornflour, then add gradually to the pan, stirring constantly until melted and smooth.

Stir in the lemon juice and a pinch of nutmeg.

Serve immediately with the cubed bread and boiled potato for dipping.
