Quick Matar Paneer

Method

    Cook the rice according to the packet instructions.

    Cut the paneer into cubes. Heat half the oil in a frying pan over medium-high heat and fry the paneer for 2–3 minutes, turning, until golden on a couple of sides. Set aside.

    Finely chop the onion and garlic. Heat the remaining oil in the same pan and fry the onion for 3 minutes until soft.

    Add the garlic, ginger, garam masala and turmeric, and cook for 1 minute until fragrant.

    Stir in the chopped tomatoes and simmer for 5 minutes until thickened.

    Season to taste, then add the peas and paneer, and simmer for 2–3 minutes until the peas are cooked through. Serve with the rice.

Use up the rest

Cooking this for one leaves 110 g paneer and ¾ tin of chopped tomato. These recipes finish them off, so plan one later in the same week.
