Method

    Coat the chicken in flour, then egg, then breadcrumbs.

    Heat the oil in a frying pan and fry the chicken for 4–5 minutes each side until golden and cooked through. Remove and keep warm.

    In the same pan, melt the butter and fry the onion and mushrooms for 4–5 minutes until softened.

    Add the stock and simmer for 2–3 minutes to reduce slightly, then stir in the soured cream.

    Taste and adjust the seasoning.

    Spoon the mushroom sauce over the schnitzel and scatter with parsley.
