
Israeli-Style Chicken Schnitzel with Israeli Salad
A single portion of Israeli cooking, ready in 19 minutes with 9 minutes of prep. Written for one, so there is nothing to halve and nothing to waste.

Bash the chicken breast to an even thickness between two sheets of cling film.

Set up three shallow dishes: flour, beaten egg, and breadcrumbs. Coat the chicken in flour, then egg, then breadcrumbs.

Heat the vegetable oil in a frying pan and fry the schnitzel for 3–4 minutes each side until golden and cooked through.

Meanwhile, toss the tomato, cucumber, red onion and parsley with the lemon juice, olive oil and a pinch of salt to make the Israeli salad.

Serve the schnitzel with the salad alongside.
