
Ethiopian Beef Tibs with Peppers and Rosemary
A single portion of Ethiopian cooking, ready in 20 minutes with 8 minutes of prep. Written for one, so there is nothing to halve and nothing to waste. It brings some heat.
Method

Heat the oil in a hot pan or wok and sear the beef strips for 2–3 minutes until browned. Remove and set aside.

Add the onion and peppers to the pan and cook for 4–5 minutes until softened and starting to char.

Add the garlic, ginger, rosemary and berbere, and cook for 1 minute.

Return the beef to the pan with the tomato, toss together and cook for 2–3 minutes until the beef is cooked through.

Season to taste, then serve with warm flatbread.
