Sri Lankan-Style Devilled Chicken

Method

    Cook the rice according to the packet instructions.

    Toss the chicken with the curry powder and a pinch of salt.

    Heat the oil in a wok or frying pan and stir-fry the chicken for 5–6 minutes until browned and cooked through. Remove and set aside.

    Add the onion and peppers to the pan and stir-fry for 4–5 minutes until slightly charred at the edges.

    Add the garlic, ginger and chilli, and cook for 1 minute.

    Return the chicken to the pan with the ketchup, soy sauce and chilli flakes, tossing to coat well. Cook for 2 minutes.

    Serve with the rice.
