Method

    Fry the crushed garlic and sliced chilli in a splash of oil over high heat for 30 seconds.

    Add the pork mince and brown for 4–5 minutes, breaking it up as it cooks.

    Stir in the fish sauce, soy sauce and sugar, and cook for 1–2 minutes, then stir through the basil leaves.

    Fry the egg separately in a little oil, keeping the yolk runny.

    Season to taste, then serve the pork over the rice, topped with the fried egg.
