
Senegalese-Style Beef Mafé Peanut Stew with Rice
A single portion of Senegalese cooking, ready in 27 minutes with 9 minutes of prep. Written for one, so there is nothing to halve and nothing to waste. It brings some heat.
Method

Heat a little oil in a saucepan and sear the beef over high heat for 1–2 minutes until browned. Tip onto a plate.

Lower the heat, add the onion, garlic and ginger and cook for 3–4 minutes until softened.

Stir in the chopped tomatoes, chilli powder and stock and simmer for 8 minutes.

Stir in the peanut butter until dissolved and simmer for 3 minutes until thickened.

Season to taste, then return the beef and its juices for 1–2 minutes, then serve over rice scattered with coriander.
