Method

    Crush the roasted peanuts to a coarse powder and mix with the paprika, cayenne, ginger, garlic powder and onion powder to make the suya spice mix (yaji).

    Toss the chicken strips in the vegetable oil, then coat thoroughly in the spice mix.

    Thread the chicken onto the skewers.

    Grill or griddle the skewers over high heat for 4–5 minutes per side until charred and cooked through.

    Taste and adjust the seasoning.

    Serve with the raw onion wedges and sliced tomato.
