Method

    Prepare the noodles according to the packet instructions.

    Heat the oil in a wok and fry the Chinese sausage for 2–3 minutes until fragrant.

    Push to one side, crack in the egg and scramble briefly, then stir through the sausage.

    Add the noodles, garlic, dark and light soy sauce and chilli paste, and toss over high heat for 3–4 minutes.

    Taste and adjust the seasoning.

    Add the beansprouts and chives, toss for 1–2 minutes more, and serve immediately.
