Kiwi-Style Mince and Cheese Pie

Method

    Preheat the oven to 200°C (fan 180°C).

    Heat a little oil in a pan and fry the onion and garlic for 2–3 minutes until soft, then add the mince and brown well.

    Stir in the tomato puree, Worcestershire sauce and stock, and simmer for 8–10 minutes until thickened. Mix the cornflour with a splash of water, stir in to thicken further, then season and stir through the cheddar.

    Spoon the mince into a small ovenproof dish, top with the pastry trimmed to fit, and press the edges to seal.

    Brush the pastry with beaten egg and cut a small slit in the top. Bake for 18–20 minutes until golden and puffed.

Cooking this for one leaves 350 g beef mince. These recipes finish them off, so plan one later in the same week.
