Ghanaian-Style Red Red Bean Stew with Fried Plantain

Method

    Soften the onion, garlic, ginger and chilli flakes in half the oil for 3–4 minutes.

    Stir in the tomato purée and paprika, and cook for 2 minutes.

    Add the beans with a little of their tin liquid, and simmer for 10 minutes until thickened, seasoning to taste.

    Meanwhile, fry the plantain slices in the remaining oil for 3–4 minutes each side until golden and caramelised.

    Serve the beans topped with the fried plantain.
