Ghanaian-Style Kontomire Stew with Smoked Mackerel

Method

    Heat the oil in a pan and fry the onion, garlic and chilli flakes for 2–3 minutes until softened.

    Add the chopped tomato and cook for 2 minutes until pulpy.

    Crumble in the stock cube with a splash of water, then stir in the spinach and cook for 3–4 minutes until wilted.

    Taste and adjust the seasoning.

    Fold through the flaked smoked mackerel and warm through for 2 minutes. Serve hot, with rice if you like.

Cooking this for one leaves 100 g smoked mackerel fillet and 50 g spinach. These recipes finish them off, so plan one later in the same week.
