Method

    Toss the plantain slices with the ginger, chilli flakes, nutmeg, cinnamon and sugar.

    Fry the plantain in half the oil for 3–4 minutes each side until caramelised and tender, then drain.

    Season the fish and dust lightly in flour.

    Fry in the remaining oil for 3–4 minutes each side until golden and cooked through.

    Serve the fish with the spiced plantain.
