Teriyaki Salmon with Sesame Greens

Method

    Cook the rice according to the packet instructions.

    Heat the vegetable oil in a frying pan over medium heat and fry the salmon skin-side down for 4 minutes, then flip and cook for 2 minutes more.

    Pour the teriyaki sauce into the pan and let it bubble for 1–2 minutes, spooning it over the salmon until glossy.

    Meanwhile, steam or blanch the greens for 3–4 minutes until just tender.

    Season to taste, then serve the salmon and its glaze over the rice with the greens, scattered with sesame seeds.
