
Brazilian-Style Moqueca Fish Stew
A single portion of Brazilian cooking, ready in 27 minutes with 9 minutes of prep. Written for one, so there is nothing to halve and nothing to waste.

Cook the rice according to the packet instructions.

Marinate the fish briefly in half the lime juice and a pinch of salt.

Soften the onion, garlic and pepper in the oil for 4–5 minutes.

Add the tomato, chilli flakes and coconut milk, and simmer for 5 minutes.

Add the fish and simmer gently for 5–6 minutes until just cooked through.

Stir through the coriander and remaining lime juice, and serve with rice.
