
Beef Birria Tacos with Consommé
A single portion of Mexican cooking, ready in 34 minutes with 9 minutes of prep. Written for one, so there is nothing to halve and nothing to waste. It brings some heat.

Put the chipotle paste, cumin, oregano, garlic, onion, tomato and stock in a pan and simmer for 12–15 minutes until the onion is soft. Mash well or blend for a smoother consommé.

Meanwhile, sear the beef in a hot pan with a splash of oil for 1–2 minutes until browned. Stir it into the consommé for 1 minute, then lift it out and chop roughly.

Dip the tortillas in the consommé, fill with beef and cheese, fold and fry in a little oil for 1–2 minutes each side until crisp.

Season to taste, then serve the tacos with the consommé for dipping, lime wedges and coriander.
