Sri Lankan-Style Black Pepper Beef Curry

Method

    Cook the rice according to the packet instructions.

    Heat the oil over high heat and sear the beef for 1–2 minutes until browned. Tip onto a plate.

    Lower the heat and soften the onion, garlic, ginger and curry leaves for 5 minutes.

    Stir in the black pepper, coriander and turmeric and cook for 1 minute.

    Pour in the coconut milk and 50ml water and simmer uncovered for 6–8 minutes until thickened.

    Taste and adjust the seasoning.

    Return the beef and its juices for 1–2 minutes, then serve with the rice.
