New Orleans-Style Blackened Fish with Dirty Rice

Method

    Mix the paprika, cayenne, garlic powder, thyme and oregano together and press firmly onto both sides of the fish fillet.

    Heat half the oil in a frying pan over high heat and cook the fish for 2–3 minutes per side until blackened and cooked through. Set aside.

    Add the remaining oil to the pan and fry the chorizo, onion, pepper and celery for 4–5 minutes until softened.

    Stir in the cooked rice and toss well for 2–3 minutes to heat through and pick up the spiced oil.

    Taste and adjust the seasoning.

    Serve the dirty rice topped with the blackened fish.
