
Hawaiian-Style Huli Huli Chicken Thighs with Pineapple Rice
A single portion of Hawaiian cooking, ready in 21 minutes with 7 minutes of prep. Written for one, so there is nothing to halve and nothing to waste.
Method

Mix the soy sauce, ketchup, brown sugar, ginger, garlic and pineapple juice for the marinade. Toss the chicken thighs in half of it.

Heat a griddle or frying pan and cook the chicken for 5–6 minutes each side, brushing with the remaining marinade, until sticky and cooked through.

Rest for 2 minutes, then slice.

Taste and adjust the seasoning.

Warm the rice with the pineapple chunks. Serve the chicken over the pineapple rice, scattered with spring onion and sesame seeds.
