
French-Style Chicken Chasseur
A single portion of French cooking, ready in 28 minutes with 8 minutes of prep. Written for one, so there is nothing to halve and nothing to waste.

Cook the new potatoes in boiling salted water for 15–18 minutes until tender, then drain.

Meanwhile, brown the chicken in a splash of oil for 4–5 minutes, then set aside.

Fry the onion and mushrooms in the same pan for 4 minutes.

Return the chicken to the pan with the tomatoes, stock and tarragon, and simmer for 10–12 minutes until the chicken is cooked through and the sauce has thickened.
