Method

    Blitz the broad beans, onion, garlic, herbs, cumin and ground coriander in a food processor to a coarse paste.

    Stir in the flour and baking powder, season well, then shape into 5–6 small patties.

    Heat the oil in a frying pan and shallow-fry the patties for 2–3 minutes each side until golden and crisp.

    Whisk the tahini with the lemon juice and a splash of water to a drizzling consistency.

    Serve the patties in warmed pitta with the tahini sauce spooned over.
