A single portion of Canadian cooking, ready in 28 minutes with 8 minutes of prep. Written for one, so there is nothing to halve and nothing to waste.
Method
- 1
Boil the mash potatoes in salted water for 15–18 minutes until tender, then drain and mash with the butter and milk. Season and keep warm.
- 2
Meanwhile, heat the oil in a frying pan and cook the onion for 3–4 minutes until soft.
- 3
Add the garlic, cinnamon, cloves and thyme, and cook for 30 seconds until fragrant.
- 4
Add the pork mince and diced potato, breaking up the mince, and cook for 5–6 minutes until browned.
- 5
Pour in the stock, cover and simmer for 8–10 minutes until the potato is tender and the liquid has mostly reduced. Season to taste.
- 6
Spoon the spiced pork mince over the mash to serve.
