Argentinian-Style Locro Corn, Bean and Pork Stew

Method

    Heat a splash of oil in a pan and brown the pork and chorizo for 2–3 minutes, then tip onto a plate.

    Add the onion and garlic and soften for 2 minutes, then stir in the paprika and cumin and cook for 30 seconds.

    Add the squash, sweetcorn, beans and stock. Simmer for 20–25 minutes until the squash is tender and the stew has thickened.

    Return the pork and chorizo for the last 4–5 minutes until the pork is cooked through. Season to taste and scatter with spring onion and chilli flakes to serve.

Cooking this for one leaves 200 g pork loin steak, 7 spring onions and ½ tin of butter beans. These recipes finish them off, so plan one later in the same week.
