Argentinian-Style Chimichurri Steak
A single portion of Argentinian cooking, ready in 20 minutes with 8 minutes of prep. Written for one, so there is nothing to halve and nothing to waste.
Method

Boil the new potatoes for 12 minutes until tender, then drain.

Mix the parsley, garlic, vinegar, chilli flakes and a splash of oil into a chimichurri sauce.

Fry the steak over high heat for 2–3 minutes each side for medium, then rest for 3 minutes.

Season to taste, then slice the steak and serve with the potatoes and chimichurri spooned over.
