
Ukrainian-Style Deruny (Potato Pancakes) with Bacon and Soured Cream
A single portion of Ukrainian cooking, ready in 22 minutes with 10 minutes of prep. Written for one, so there is nothing to halve and nothing to waste.

Grate the potatoes and onion, then squeeze out as much excess liquid as you can through a clean tea towel.

Mix the grated potato and onion with the egg, flour, salt and pepper to make a batter.

Fry the chopped bacon in a frying pan for 3–4 minutes until crisp, then remove and set aside, leaving the fat in the pan.

Add the oil to the pan and spoon in the potato mixture in small rounds, flattening slightly. Fry for 3–4 minutes each side until golden and cooked through.

Scatter the bacon over the pancakes and serve with a dollop of soured cream and the chives.
