Tochitură with Polenta and a Fried Egg

Method

    Heat the oil in a frying pan over a high heat and brown the pork for 4–5 minutes. Add the sausage and fry for 2 minutes more.

    Stir in the garlic and paprika for 30 seconds, then add the passata and wine. Simmer for 8 minutes until the sauce coats the meat.

    Meanwhile, bring the water to the boil with a pinch of salt, whisk in the polenta and cook, stirring, for 3–5 minutes until thick. Stir in the butter.

    Push the meat to one side of the pan, crack in the egg and fry until the white is set.

    Spoon the polenta onto a plate, top with the tochitură and the egg, and scatter with the crumbled cheese.

Use up the rest

Cooking this for one leaves 180 g feta, 470 ml passata and 200 g smoked sausage. These recipes finish them off, so plan one later in the same week.
