
Lemon Chicken Piccata with Green Beans
A single portion of Italian cooking, ready in 18 minutes with 8 minutes of prep. Written for one, so there is nothing to halve and nothing to waste.

Slice the chicken breast horizontally into two thin escalopes and dust lightly with flour.

Heat the olive oil in a frying pan over medium-high heat and fry the chicken for 3 minutes each side until golden and cooked through. Remove to a plate.

Add the butter, capers, stock and a squeeze of lemon to the pan, scraping up any bits, and simmer for 1–2 minutes until slightly thickened.

Meanwhile, cook the green beans in boiling water for 4–5 minutes until just tender.

Taste and adjust the seasoning.

Spoon the caper sauce over the chicken and serve with the green beans.
