Method

    Boil the potatoes in salted water for 12–15 minutes until tender, then drain and mash with the butter and milk.

    Meanwhile, heat the oil in a frying pan and brown the lamb mince for 4–5 minutes, breaking it up as it cooks.

    Add the onion and carrot and cook for 3–4 minutes until softened.

    Stir in the tomato purée, stock, Worcestershire sauce and thyme, and simmer for 6–8 minutes until thickened.

    Spoon the lamb mixture into a mug or small dish, top with the mash, and serve (or flash under a hot grill for 3–4 minutes to brown the top).
