Moroccan-Spiced Lamb with Couscous
A single portion of Moroccan cooking, ready in 18 minutes with 8 minutes of prep. Written for one, so there is nothing to halve and nothing to waste.
Method
- 1
Put the couscous in a bowl, pour over the hot stock, cover and leave for 5 minutes until absorbed.
- 2
Finely chop the onion, garlic and dried apricots.
- 3
Heat the olive oil in a frying pan over medium-high heat and fry the onion for 2 minutes until softened.
- 4
Add the lamb mince, breaking it up with a spoon, and fry for 4–5 minutes until browned.
- 5
Stir in the garlic, cumin, cinnamon and apricots, and cook for 2 more minutes.
- 6
Season to taste, then fluff the couscous with a fork and serve the spiced lamb on top, scattered with torn mint leaves.
