
Dutch-Style Beef Croquettes (Bitterballen-Inspired) with Mustard
A single portion of Dutch cooking, ready in 35 minutes with 25 minutes of prep. Written for one, so there is nothing to halve and nothing to waste.
Method

Melt the butter in a small pan, stir in the flour and cook for 1 minute to make a roux.

Gradually whisk in the stock until smooth and thick, then stir in the chopped beef, mustard and nutmeg. Cook for 2–3 minutes until very thick.

Taste the mixture and adjust the seasoning.

Spread the mixture onto a plate and chill in the freezer for 15 minutes until firm enough to shape.

Roll into 4–5 balls, dip each in beaten egg then breadcrumbs.

Heat the oil in a pan and fry the croquettes for 3–4 minutes, turning, until deep golden and crisp. Serve hot with mustard.
