Chinese-Style Cumin Lamb Stir-Fry with Peppers

Method

    Toss the lamb with the soy sauce and Shaoxing wine and set aside to marinate briefly.

    Heat the oil in a wok over high heat, add the lamb and stir-fry for 2–3 minutes until browned. Remove and set aside.

    Add the onion and pepper to the wok and stir-fry for 2–3 minutes until starting to soften.

    Add the garlic, cumin seeds and chilli flakes and stir-fry for 30 seconds until fragrant.

    Return the lamb to the wok and toss everything together for 1–2 minutes until piping hot.

    Taste and adjust the seasoning.

    Scatter with coriander and serve with rice.
