
Austrian-Style Zwiebelrostbraten (Onion-Smothered Beef Steak)
A single portion of Austrian cooking, ready in 28 minutes with 8 minutes of prep. Written for one, so there is nothing to halve and nothing to waste.

Boil the new potatoes in salted water for 15–18 minutes until tender.

Toss the sliced onion in the flour. Heat the oil in a frying pan and fry the onions for 6–8 minutes, stirring occasionally, until golden and crisp; remove and set aside.

Season the steak, add to the same pan and fry for 2–3 minutes each side, then remove and rest.

Add the butter and paprika to the pan, pour in the stock and simmer for 2 minutes, scraping up any bits, to make a quick gravy.

Slice the steak, spoon over the gravy, and pile the crispy onions on top. Serve with the potatoes.
